Longueville Manor is the 1st and only 5 red AA star Hotel, with one Michelin key in the Channel Islands. It is situated a mile to the east of St. Helier, the capital of the Island of Jersey. The island is fringed with miles of sandy beaches and is frequently blessed with the longest hours of sunshine in the UK. Set in 17 acres of parkland, this 13th century Norman manor house has been lovingly restored and run as a hotel by the Lewis family for over 75 years.

Today, the hotel has 22 double rooms, 6 suites and a 2 bedroom cottage, with a 3AA rosette restaurant, which enjoys a strong local following as well as an international reputation and is the only Relais & Châteaux member in the Channel Islands.


As Head Waiter, you will lead by example, delivering flawless service and inspiring a team to provide outstanding experiences for our guests. You’ll work closely with the Restaurant Manager to maintain the highest standards of food and beverage service, ensuring every detail of the dining journey reflects our commitment to excellence.

Key Responsibilities:

  • Supervise and support the front-of-house team during service, ensuring smooth operations and consistent high standards
  • Deliver expert knowledge of menus, dishes, and wine pairings; confidently guide guests through their dining experience
  • Conduct team briefings, manage daily rotas, and maintain accurate service records using EPOS and other admin tools
  • Uphold fine dining etiquette and presentation, with a focus on professionalism, timing, and attention to detail
  • Support training and development of junior staff, fostering a positive and professional team environment
  • Act as a brand ambassador for the hotel and Relais & Châteaux, reflecting the values of excellence, authenticity, and local culture

  • Proven experience in a similar supervisory or senior waiter role within a 5-star hospitality setting
  • Previous experience in a Relais & Châteaux property is highly desirable
  • A genuine passion for delivering exceptional guest service
  • Strong leadership, communication, and interpersonal skills
  • Solid understanding of fine dining service, including cheese presentation, menu explanation, and etiquette
  • Proficient in the use of EPOS systems and restaurant administration
  • Knowledge of bar and wine service is an advantage
  • Smart personal presentation and a professional, calm demeanour under pressure
  • Fluency in English is essential; other languages are a plus
  • Familiarity with local produce, wines, and Jersey’s dining scene is a benefit
  • Valid food safety & hygiene certification is preferred (training can be provided)
